If you've never seen or tried pea shoots before they make seem a bit strange at first, but OH MY are they a tasty spring treat. They have a sweet, subtle sweet pea flavor that goes great in any dish. I don't have a stand-alone recipe for these green pea shoots, but here are some tips!
What to do with Pea Shoots:
1. Pick off the leaves and add to salad
2. Chop leaves, curly tendrils, and stalk and sauté with ghee and a pinch of salt for a side dish
3. Add to soup!
4. Make Pea Shoot Pesto! (pea shoots, tahini, coriander powder, salt, pepper -- just an idea)
