You may be familiar with brussel sprouts, but what are brussel sprout greens?? The brussel sprout plant is actually quite large. It has a thick center stalk with leaves protruding out every few inches. At every intersection between a leaf stem and the center stalk, a brussel sprout forms. The brussel sprout greens are actually the leaves of the plant.
Often the leaves are overlooked, and the only part harvested is the traditional brussel sprouts. But the brussel sprout leaves are too delicious to go to waste! They can be eaten just like kale or collard greens. In addition to being delicious, taking off some of the leaves from the plant actually encourages better production of the brussel sprouts (which will be ready in the Fall).
